Before joining the team, David made a name for himself as an executive chef at the award-winning, Fishy Fishy in Kinsale for an impressive 14 years. Known for his innovative approach to cooking, he has earned a reputation as a renowned chef with a passion for pushing culinary boundaries.
David's dishes are a reflection of his creative flair and commitment to using only the freshest, locally sourced ingredients. His bold flavour combinations and inventive presentation showcase his skill and expertise, and his commitment to using seasonal produce ensures that every dish is bursting with flavour.
Before joining The Pavilion, David was head chef at Ballinacurra House in Kinsale. David spent 2 years working as head tutor at Dublin’s premier cookery school, Cooks Academy. Prior to this, he worked as a senior chef at Dublin’s Michelin-star restaurant Chapter One.
Kinsale was the birthplace of David’s career which has spanned over 15 years and in various prestigious kitchens including Roly’s Bistro in Ballsbridge, Gordon Ramsay’s Claridges, River Café, and Jamie Oliver’s Fifteen in Cornwall. David has won many accolades including Best Chef in Limerick at the Restaurant Association of Ireland awards 2010, while he was head chef at the Mustard Seed restaurant in Adare, Co. Limerick.
